As Director of Food & Beverage, Gregory leads the strategic vision and operations for Hotel Celare’s culinary team, overseeing its two signature dining concepts. The Vick, a rooftop bar with outdoor seating, offers bold flavors and handcrafted cocktails in a vibrant setting, while Iris Café serves artisanal breakfast delights, fresh pastries, and breakfast sandwiches by day, before transforming into a lively evening bar featuring handcrafted cocktails, fine wines, and curated artisanal beverages.

Prior to joining Hotel Celare, Gregory served as Corporate Beverage Director for The Hampton Social Rooftop in Chicago, where he grossed $42 million annually and led a two-time award-winning cocktail program. His extensive expertise includes certifications as Court of Masters Sommelier (CMS) Level I, Certification of Alcoholic Beverages Containing Tequila (CRT) Tequila Expert Level I, Barsmarts Level II, and TIPS Certification. Gregory has had numerous cocktails featured in books and online publications, launched ready-to-drink (RTD) cocktails, and curated a private label wine collection.

With a passion for innovation and a deep understanding of the evolving beverage landscape, Gregory brings a dynamic and guest-centric approach to Hotel Celare, ensuring every dining and drinking experience is elevated, memorable, and seamlessly executed.
